Tonight’s Dinner

... Could be this lovely tomato soup served in our DELI ceramic.

You can prepare this soup with adding a carrot and a stalk of celery, you can skip the potato’s replace the pesto sauce with fresh basil, add cream or milk.

Ingredients for 2 -3 people:

1 kg of ripe tomatoes

a couple of tablespoons of extra virgin olive oil

salt and pepper

1 onion

1 small potato

2 cloves of garlic

1 bay leaf

1 cup of vegetable broth

2 teaspoons basil pesto

a couple of tablespoons of cream or milk

Cut the tomatoes in half, arrange them on the baking tray, salt, pepper and sprinkle with a little extra virgin olive oil. Bake in the oven for about 15 minutes at 250 °

Cook on low heat with lid the sliced onionn, garlic and potato, add the broth, bay leaf for 10-15 minutes or until vegetables are tender.

Put the tomatoes in the pan, remove the bay leaf and blend it all.

Season with salt and pepper and add the cream.

Pour in the plates, decorated with a teaspoon of pesto and serve with croutons.
